We create a unique gin from the botanical essence of our pure surroundings here on the Tasman peninsula.
The gin we make at Impression Bay Distillery is crafted from traditional botanicals including juniper, coriander, cardamon, star anise and cassia bark. Added to that are locally grown botanicals including Tasmanian Kunzea (Kunzea Ambigua) and Tasmanian Mountain Pepper Berry (Tasmannia lanceolata). The distillation uses only pure Tasmanian rainwater – believed by many to be the cleanest in the world.
The distillery is nestled above Impression Bay at Premaydena, hidden on the shores of the beautiful Norfolk Bay on the breathtaking Tasman Peninsula – a place of historic significance on many levels.
The indoor tasting area. This is where visitors can rest in century old chairs originally crafted for the Tasmanian Museum board room in Hobart. There is also an outside tasting area taking in the panoramic views over Impression Bay and the surrounding rural countryside and, on a clear day, across to Mount Wellington / Kunanyi above Hobart In the far distance.
The distillery’s hand beaten German copper still. Our still was created by a fourth generation family run business not far from the Black Forest in Germany. The epicenter of many fine European spirits. This still is specially designed to capture the essences of fresh botanicals and to create a refined and sophisticated spirit.
