In the heart of Hobart, housed in Argyle Street’s iconic old Mercury Print room, The Still is the premier destination for Tasmanian whisky enthusiast and cocktail lovers.

Multi-award-winning Tasmanian whisky producer, Lark Distilling Co., has opened a new whisky bar in the heart of Hobart. A retail and tasting room by day meanders into a suave yet comfortable whisky and cocktail lounge experience as the sun sets and the night unfolds. 

Lose track of time browsing our exceptional and extensive Tasmanian whisky collection, pop in for an impromptu tasting or join a more formal experience. If that all seems like too much work, simply sit back in one of our booths and let us take care of the rest. 

The Still is a celebration of Tasmania’s world class whisky industry and will showcase and serve some of the most impressive local whiskies from across the state within the old Mercury Print Room in the heart of Hobart.

Over 150 local options available by the measure or to purchase by the bottle and guests will be greeted by the Tasmanian whisky hall of fame upon entry, which proudly celebrates the distilleries that have launched, championed and inspired the local community, including the Lark team.

WHISKY TASTING EXPERIENCE

Ever wondered what the deal is with Tasmania and whisky? 

This 45-minute guided tasting takes you through the process from grain to glass, highlighting what makes Tasmania home to some of the words best drams. You’ll taste three unique whiskies straight from the cask, whilst learning how to separate your malt from your mash – perfect for anyone starting their whisky journey. 

Welcome to Whisky costs $99 and is offered at 2pm Monday, Friday and Sunday. It can be booked via our reservations button below and takes approximately 45 minutes.

LARK, A Deep Dive Whisky Experience

What do you call a unicorn crossed with a LARK? We don’t know either, but this is the only place you’ll be able to try some rare drams from the LARK vaults. 

Spend an hour in our whisky lounge with one of our whisky experts, hearing the tales that built one of the iconic whisky brands, and tasting whisky that’s too rare to even make it to our back-bar. 

LARK, A deep Dive costs $299/person and is a 60-minute guided tasting offered at 5pm every Thursday and 2pm every Saturday.
