In the Islington kitchen, the focus is always seasonal, local and organic where possible. Our menu changes regularly to allow us to serve only the freshest local ingredients with an emphasis on the best Tasmania has to offer.
Our Head Chef, Glen Tilly, has created a beautiful four course degustation menu that is served in our mountain view conservatory five nights a week from Wednesday to Sunday, we also serve a classics a la carte menu for guests that would prefer something a bit more simple. Our menu is designed with an emphasis on seasonal, local and organic Tasmanian produce from small producers, or our garden where possible.

The Islington Restaurant is open for dinner Wednesday to Saturday . We closed Sunday Monday and Tuesday for dinner service. The restaurant serves creative cuisine based on fresh local produce. Seasonal menu items include seared duck breast with braised figs, and slow-cooked abalone with wild forest mushrooms. The wine cellar offers a wide selection of wines.
