When Chris and Meagan de Bono finished up their respective careers in the Royal Australian Navy, Chris as a Navigator and Meagan as a Logistician, they knew that they wanted to do something that genuinely contributed to people’s health and wellbeing.
They are passionate about food and food systems and are acutely aware that most processed foods contain ingredients that are better to be avoided. While they were learning more about food systems and how they might make a difference, they stumbled across miso and they quickly learned that no one was making miso in Australia.
Miso is a largely undiscovered superfood that is much more than just miso soup. In Japanese cuisine, miso is often used as a general seasoning, much the same way that soy sauce is used in Chinese cooking, or that we use salt and pepper in European cooking.
Chris and Meagan are on a mission to provide people with real food and introduce more people to miso and the many ways that it can be used.
What is Miso?
Firstly, it’s much, much more than Miso Soup. Miso is a paste made from fermented Koji (usually rice, but can be barley or other grains), cooked soybeans and salt all mashed up together, and this combination gives us a savoury, salty, earthy, sometimes sweet paste that packs a umami punch when added to your favourite foods.
