Tasmanian Oyster Co. oysters thrive in the cool, clean, nutrient-rich Tasmanian waters growing into arguably some of the best in the world. But our oysters’ journey does not start here, it begins in our hatchery, Shellfish Culture, where baby oysters (called Spat) are hand-raised using best practice methods.
Once the babies reach 2mm in length they are transported to one of our four growing regions, all located along the Eastern Coast.
Our oysters grow in these pristine regions until they reach between 8 and 12cm in length, they are then hand-harvested before being exported to local & national restaurants, seafood specialist retailers and across the globe.
Tasmania is a beautiful, isolated island located 240km south of the Eastern tip of the Australian mainland. We are surrounded by some of the most pristine waters in the world with unpolluted currents flowing north from the Antarctic region.

Exporting Our Oysters
All of our Oyster farms are export approved waters meeting strict Australian and International food quarantine guidelines.
Our export product is packed in our own approved packing facility with strict QA and HACCP programs that control our entire domestic and export processing and packing.
Tasmanian Oysters quality assured
Tasmania has adopted an internationally accepted Quality assurance program for the reduction of food safety risks of shellfish consumption. This program is carried out by Shellfish Market Access Program (ShellMAP) allowing Tasmanian oysters to enjoy an enviable food safety record. Our harvest areas are monitored to record the salinity levels after rainfall.

The sustainable management of Australia’s Southern Coastline is of great importance to us. Distribution
Cold chain compliance is important to us, we work closely with transport companies to ensure product temperature and handling is of the expected standard ensuring the freshest oyster nutrition. Whole live Pacific Oysters should be stored at 3 to 4 degrees Celsius and will keep for up to 10 days from harvest date. We have collated some delicious oyster recipes for you so you can enjoy fresh Tasmanian oysters right from our oyster farm on your dinner table – as fresh as oysters can be.
Our Hatchery
The Tasmanian Oyster Co. hatchery, trading as Shellfish Culture Ltd., was founded as a co-operative in 1979 by the early pioneers of the Tasmanian pacific oyster industry.
In its 30 plus year history, the Company has matured into a confident unlisted public company, with shareholders comprising of a mix of aquaculture producers and private investors.
Our professional hatchery staff are all highly trained and multi-skilled technicians who are dedicated to producing the highest quality shellfish seed in the world.
Our Growing Regions
Each of our growing regions, just like wine, produces an oyster with a unique taste, colour, appearance and flavour that is particular to that region. Tasmanian oysters are the finest in the Australian market. Their distinctive full-bodied flavour is complimented by alluring colours and aromas. Our growing regions are Marion Bay, Little Swanport, PipeClay Lagoon and Pittwater.
