Belvedere Restaurant and Bar is a destination restaurant within a hotel that effortlessly shifts from breakfast to all day dining with casual ease. Located on the ground floor of the new @VibeHobart hotel, Belvedere will be the go-to destination for Hobart’s local foodie scene to experience our island state’s best local produce.

Belvedere feeds a growing global appetite for authentic local encounters intertwined with paddock to plate. Through thoughtful interactions, we will create experiences that talk to the providence of the site (through art and design) and to the produce we serve.

The site’s colonial backstory serves as an entrée to its incarnation as ‘The Belvedere’ – a beloved Art Deco dance hall that shaped the city’s social fabric from the late 1930s. This story is memorialised in mesmerising chain art – featuring a 7.5m x 3m Kriskadecor panel.

Paying homage to this memory, the new ‘Belvedere’ will take its rightful spot as a modern-day gathering place, inviting travellers, corporate crowds and locals to celebrate the best of Tasmania.

From paddock to seashore, the menu will showcase the Apple Isle’s rich bounty of produce, and Tasmanian Atlantic Salmon will share centre stage with Cape Grim Beef, local cheeses and artisan products.

Here, produce is revered, crafted with contemporary flair and best washed down with a bottle of Josef Chromy’s finest.

And, most importantly, it’s a place where you can unwind with a full-bodied red in front of a roaring fire or connect with friends.

We will set tongues wagging on the promise of the ‘best of’ Tasmania’s paddock-to-plate culinary delights and serve Tasmania up at every touch point.
