In Italy, porchetta can refer to a roasted whole suckling pig, an older pig, or just the pork belly roll, and our ‘porchetta tronchetto’, filled with fragrant fennel seeds, garlic, lemon, parsley, and wine, needs to be marinated for 15 hours with a special sauce before roasting for a crispy skin. This glorious creation, specially crafted by Chef Glen, makes Nonna’s Sunday Lunch extra special.
